Now, my mom nad my grandma both made pickles when I was a kid. I remember the jars and jars that they both put away. Seven Day Pickles, Bread and Butter Pickles, Dill Pickles, you name it. Lots of pickles. I could get those recipes, but I really don’t need 17 jars of one kind of pickle, nor do I have the desire to make that many. How fortuitous then that there are now lots of recipes around that only make a couple of jars. Or in this case – one big jar. I found this recipe at the always fabulous Smitten Kitchen blog. It is easy, and since you are only doing up one jar not even very labour intensive. I know a lot of people think of canning as something that requires hours and hours of time, but that is really not the case any more. This jar took maybe 20 minutes total work. There is a 2 hour window required to let the pickles sit, but I don’t count that as work, since you don’t have to do anything with them during that time, just leave ’em on the counter to get happy. For 20 minutes out of my day, yummy pickles are totally worth it.
